Today is my son Cole's 5th Birthday. :)))) Happy Birthday! :)))) Cole isn't one for sweets or traditional cakes. However he does like ice cream. :)))) So I spent all of yesterday afternoon making him an ice cream cake. I thought some of you might like it so I'm passing the recipe on to you. :))))
What You Need
- 1 package oreo cookies
- 1 package other flat cookies. (we chose Rainbow M&M Chips Ahoy)
- 1 Stick butter
- 1 Jar Hot Fudge
- 1/2 Gallon cookie dough ice cream
- Round pan
Take the oreo cookies and crush them up. I used a food processor to do it quicker. Set a little bit aside to use on the top of the cake.
When you have the entire package crushed, melt a stick of butter and add it to the oreos. Mix it together and then put it in the bottom of the pan. Press it down in the bottom until it is pretty firm.
Line the cookies you have chosen around the edge of the pan. This will help to form your slices. :)
Heat the hot fudge and pour it over the oreos and in between the cookies.
Then put the pan in the freezer to let the hot fudge firm up. At the same time you want to take the ice cream out of the freezer so that it softens.
When the ice cream is really soft, and the top of the fudge is fairly firm, add the ice cream on top of the hot fudge.
Add a couple of teaspoons of crushed oreo to the top of the cake.
Drizzle the top with caramel and chocolate sauce. (optional)
